This nut roast has been served at our free food fayres and goes down very well, hot or cold. It comes from Pogo Cafe where it has been on the menu for some time. The marmite gives it a special flavour. The uncooked mix can also be shaped into burgers and fried.
Cashew Nut Roast
1 lb (450g) of cashew nuts
12 oz (340g) of breadcrumbs
1 teaspoon basil
1 dessertspoon thyme
generous pinch black pepper
4 large onions
2 cloves of crushed garlic
sunflower oil to cover the bottom of the pan
1 cup wholemeal flour
15 fl oz (430ml) water
2 dssp soya sauce
2 dssp lemon juice
3 dssp marmite
enough sesame seeds to sprinkle on top
1. Preheat the oven to 200°C/400°F/Gas Mark 6.
2. Chop nuts in blender. Turn bread into breadcrumbs in blender. Mix together in mixing bowl and add herbs and black pepper.
3. Chop onions in blender then fry together with garlic powder. Add the wholemeal flour and mix, then cook gently for a couple of minutes. Add the water, mix and bring to the boil. Add soya sauce, lemon juice and marmite. Take pot off the heat and then add the dry mix. Thoroughly mix the two together.
4. Place the mix in a baking tin and sprinkle sesame seeds on top. Place in the oven for 45-60 minutes. Serves 8
