Energy Balls
The recipe for these little balls comes from Eat Smart Eat Raw by Kate Wood. They are gluten free and contain no refined sugar. They are very easy to make, handy to take out as a snack, and have been served at several of our free food fayres.
9 oz (250g) cashew nuts (unsalted)
4½ oz (125g) dates
4½ oz (125g) raisins or sultanas
1. Grind the cashews in a blender/food processor. Add the dates and mix (you may need to do this in small amounts) to form a mass.
2. Put into a bowl and mix in the sultanas.
3. Roll into balls and then roll each ball in carob powder, sesame seeds or desiccated coconut. Keep in fridge
